Loaded Sweet Potato Tikka Boats

INGREDIENTS

Loaded Sweet Potato Boats

  • 2 Roasted Beet & Walnut Tikka Patties, cooked per package instructions
  • 2 Large Garnet Sweet Potatoes
  • 1/4 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Pepper
  • 1 mashed Avocado
  • 1 tbsp Lime Juice
  • 1 tsp Red Paprika
  • 2 tbsp crumbled Feta (or tangy cheese of your choice)
  • 2 tbsp oil of your choice
  • Pickled onions to garnish

Dipping Sauce (Babo's Cilantro Yogurt): 

  • 1/4 cup Greek style yogurt (of your choice)
  • 1 tbsp Lime Juice
  • 1 Garlic Clove, grated
  • Handful Cilantro, finely chopped
  • 1/2 tsp Red Chili Flakes or 1/2 Jalapeño diced (optional) 
  • Salt to taste

DIRECTIONS

Roast the Sweet Potatoes:

  • Heat the oven to 425F
  • Wash and slice in halves lengthwise. 
  • Massage a little oil of your choice. Place in the oven on a baking sheet for 30 minutes or until tender.
  • Scoop out a small portion from the center to form the shape of a boat. 

Assemble:

  • Fill each boat with mashed avocado and crumbled Roasted Beet & Walnut Tikka Veggie Patties.
  • Sprinkle lime juice, salt, red chili flakes, and cilantro.
  • For extra crunch, add puffed chickpeas or another puffed grain of your choice (e.g., rice, quinoa, etc.)
  • Lastly, drizzle Babo's Cilantro Yogurt for that extra yum!
